Behind the Blend: Meet Sallianne
First things first – who are you and what’s your role here at Icely Done?
I’m Sallianne, Sal to most — and I manage the On Trade Team here at Icely Done.
What’s the best bit about working here (besides the cocktails)?
The sense that everything we all do has an impact on the business and it is noticed right through the company. We all share in the achievement be that from a technical/Ops perspective or from within sales.
How did you get into the drinks game?
I’ve been in sales forever, working with everything from huge corporate firms to founder led businesses. And I’ve spent 22 years in the drinks industry. Shocking, I know!
Favourite bar or festival to get your fix?
Cahoots in London, hands down. It’s quirky and cosy, and it makes you feel like you’re part of something special. I always grin when I hear someone’s been there.
If you had to pick one cocktail forever, what’s your lifeline?
Pina Colada. Proper old school. No shame in that.
Most unforgettable cocktail moment — don’t leave us hanging.
A friend and I enjoyed the best Espresso Martinis in a tiny bar in Barcelona. The music was perfect, the vibe chilled, and the company even better.
If your job was a cocktail, what would it be?
A Lychee Martini. It’s got a bit of elegance and uniqueness, much like our blends and customers. But at the end of the day, we all roll up our sleeves and get stuck in — no fuss, just results.
If you opened your own bar, what would it be called and what would the signature serve be?
It would be called Sal’s. The signature serve? A stunning Bellini made with Rhubarb and Strawberry Blend, topped with gold leaf — because why not add a little sparkle?
What’s the most unexpected part of your job that people probably wouldn’t guess?
Setting up machines and getting lubricant stains on my clothes — a glamorous life, right?
What’s one thing you’ve learned about cocktails or the drinks industry since working in it?
I quickly realised I knew nothing about the craft side of things. Even after all these years in On Trade, the passion and skill involved still amaze me.
