First things first – who are you and what’s your role here at Icely Done?
I’m Henry Giles, and I’m the Southern Sales Manager here at Icely Done!
What excites you most about working at Icely Done?
Being part of a brilliant team that’s helping bars and hospitality venues serve premium cocktails quickly and consistently. We’re not just selling Blends, we’re solving real problems for the trade with smart, time-saving cocktail solutions.
Give us a little flavour of your background – how did you end up shaking things up in this role?
I fell for the hospitality world while working behind the bar at uni. That turned into a role as head bar manager for a Midlands-based group, before I set up my own drinks consultancy focused on menu development and events.
London eventually tempted me in, where I joined one of the UK’s top premium gin brands, managing accounts in southwest London before stepping into a prestige sales role. After six years, my wife and I decided it was time for a change, so we swapped the city for Bath. Icely Done made that move possible, and now I get to help venues across the South serve high-quality cocktails with ease.
Favourite bar or festival?
Either Dram for a proper whisky, or Dukes for a textbook martini. Though truth be told, I’m often happiest in a quiet pub with a local ale.
If you could sip just one cocktail for the rest of your life, what would it be?
It’s got to be a very dry martini with a lemon twist. Classic, clean, no fuss.
Which of our Blends are you most excited about?
Pineapple & Coconut. It’s just pure fun, whether it’s frozen or shaken. Who doesn’t love a Piña Colada?
Most memorable cocktail moment?
Drinking a Piña Colada straight from a coconut while watching the sunset on a Costa Rican beach. That one’s hard to beat!
If your job were a cocktail, what would it be and why?
A Miami Vice. It’s a blend of different parts — sales, relationships, product knowledge — and when it all comes together, it just works.
